"We're not gritty, we're not edgy, we're pretty straight-laced here even though we've got an edgy motif," said Dearmore, 40, the general manager of Republic Coffee. "Our business is mainly from 11 a.m. to 3 p.m. every day, business people who come in to get lunch."
