There's another category, though, that encompasses a greater variety of food. Entrants in "Anything But" (and this year there are more than 300 competitors) can enter their specialities under beef, poultry, seafood or exotic.

Frog and turtle, by the way, must be entered in exotic, not seafood; and so does beefalo .
